Moist & Light Fruit Cake (the BEST ever!)

Perfect for Christmas and even weddings!

The cake has a perfect mix of fruits in it – raisins, sultanas, candied mixed peel, cherries, and candied ginger. 

And you can adjust this fruit mix to your liking!

What you need: 

– Flour  – Mixed spices – Brown sugar – Butter  – Eggs – Mixed fruits  – Ground almond – Molasses (optional) – Orange & Lemon juice – Vanilla essence

Step 1

Measure the mixed fruits into a large bowl.

Add the ground almonds to the fruits and mix well. Set aside while you make the cake batter.

Step 2

Cream the butter and sugar until light & fluffy.  Add in the eggs, molasses, lemon juice and vanilla.  Fold in the flour alternately with orange juice.

Step 3

Finally, add the dried fruits mix into the cake batter. Fold until they are well incorporated.

Step 4

Prepare the cake tin.  Make sure the tin is double lined with parchment and wrapped with cake strips.

Step 5

Pour batter into the prepared tin. Bake for 2 hours and 10 minutes.  Let it cool in the tin for 10 minutes before turning it out onto a wire rack to cool completely.

Bake at a reduced temperature  Rest the cake for one week before cutting
