Earl Grey Milk Tea

This Earl Grey milk tea recipe is perfect to make iced and hot tea. It is easy and you can even add boba pearls to make Earl Grey bubble tea!

Ingredients

Milk Tea

  • 300 ml water
  • 250 ml milk
  • 2 Earl Grey tea bags
  • 2 tablespoon coarse white sugar
  • Ice cubes (for iced tea)

Boba pearls in brown sugar syrup

  • ½ cup boba pearls (uncooked)
  • 50 g brown sugar
  • 25 ml water (for the syrup)
  • 500 ml water (to cook the pearls)

Instructions

Hot Tea

  • Fill a small pot with water (300ml) and bring it to a boil.
  • Turn off the heat and dip the tea bags into the hot water. Let the tea steep in the hot water for 3 minutes.
  • Cover the pot with a lid while waiting for the tea to steep.
  • Remove the teabags (squeeze out all the liquid tea from the bags) and discard them.
  • Add milk.
  • Next, add sugar to the tea and stir to dissolve. Since the tea is hot, this should not take more than 1 minute. Pour into cups and serve.

Iced Tea

  • Add half of the water (150ml) in the recipe into a small pot. Bring it to a boil.
  • Turn off the heat and dip in the tea bags. Cover the pot with a lid and let the tea steep in the hot water for 3 minutes.
  • Remove the teabags (squeeze out all the liquid tea from the bags) and discard them.
  • Add sugar and stir to dissolve. Top up with the remaining water (150ml) and the milk. Stir well.
  • Chill the tea in the refrigerator until ready to serve.
  • To serve, add ice cubes into a drinking glass. Pour in the tea and serve.

Bubble Tea

  • Boil the boba pearls accordingly to the package instructions. If none, add 500ml water into a saucepan and heat it up until it comes to a boil. Add the uncooked pearls and stir to prevent them from sticking to one another. Within a few minutes, the pearls will float to the top.
  • Continue cooking the pearls for 15 minutes (or as per the package instructions). Test after 15 minutes to see if the pearls have cooked (they should be chewy and not hard in the center). If not, continue cooking for an additional 5 to 10 minutes and test again.
  • Once the cooking is done, turn off the heat and let the boba pearls soak in the hot water for another 15 minutes before straining them.
  • To make the brown sugar syrup, add the water (25ml) into a small saucepan. Add the brown sugar and cook on low heat until the sugar is all dissolved. Stir to expedite the sugar dissolving.
  • Continue to cook until the syrup thickens lightly (the syrup should start to bubble on the sides). Do not overcook the syrup.
  • Turn off the heat and add the drained boba pearls. Mix well.
  • To assemble the Earl Grey bubble tea, divide the boba pearls into 2 drinking glasses.
  • Top the boba pearls with ice cubes.
  • Pour in the cold milk tea and serve.
