Lime Popsicles

If you love limes, you will love these easy lime popsicles. With only 3 ingredients, these cool treats are absolutely easy and refreshing.

Ingredients

  • 250 ml water (drinking water)
  • 100 g sugar
  • 3 tablespoon lime juice (approximately 3 limes)

Instructions

  • Prepare popsicle mold.
  • Measure water into a small pot.
  • Add sugar and turn on the heat to low.
  • Stir until the sugar is dissolved, keep the heat low.
  • Once the sugar is all dissolved, turn off the heat and let the sugar solution cool down completely.
  • Cut the limes into half and squeeze the juice out (see Notes 1 & 2).
  • Strain the juice and add it into the sugar syrup solution. Mix well.
  • Pour the solution into the prepared molds. Cover and insert the popsicle sticks.
  • Freeze for approximately 5 to 8 hours until the popsicles are completely frozen.
  • To unmold, dip the mold into a dish filled with water. Let it rest in the water for a few seconds before removing the popsicles and serving them.

Notes

  1. Limes have rather thick skin, similar to lemons and oranges. While you can squeeze them by hand, it is always easier to use a juicer.
  2. An important trick in squeezing lime juice is to roll the fruits on the counter with your hands, and in doing that, applying pressure on them. This helps soften the fruits and helps in juicing them. To juice the fruits, cut them into halves. Place them in a juicer and press to remove the juice.
  3. Generally, frozen treats become less intense after freezing, so it is always better to prepare them in a more concentrated form. The amount of lime juice and sugar I use to make these treats is slightly higher than that used to make a simple lime juice drink. If you prefer a more subtle lime flavor or prefer your popsicles to be much less sweet, you can always adjust these accordingly.
