Ingredients

Black Tea

  • 2 black tea bags (or 2 teaspoon black tea leaves)
  • 500 ml water
  • ice cubes (optional)
  • 20 lychees (canned)

Lychee Syrup

  • 60 ml syrup (from the canned lychees)
  • 60 g sugar
  • 10 lychees (canned)

Instructions

Lychee syrup

  • Place the lychees in a food processor. Measure in the syrup and blend until smooth.
  • Strain the lychee juice with a fine mesh strainer or cheesecloth. Squeeze out all the juice and discard the pulp.
  • Pour the lychee juice into a pot.
  • Add sugar and turn on the heat to a low.
  • Cook the syrup over low heat until the sugar is dissolved. Stir occasionally.
  • Turn off the heat and let the syrup cool down while preparing the black tea.

Making the black tea

  • Pour half of the water into a medium sized pot. Turn on the heat to medium and bring the water to a boil.
  • Turn off the heat and add the tea bags. Submerge them in the hot water.
  • Cover the lid and let the tea steep in the hot water for 3 minutes.
  • Remove the tea bags and squeeze out all the tea from them before discarding. If using tea leaves, strain the tea into a heat resistant mixing glass.
  • Add the remaining water and stir well.

Assembling the lychee tea

  • Pour the prepared lychee syrup into the black tea. Stir to mix.
  • Prepare drinking glasses. Add about 4 to 5 lychees into each glass.
  • Top with ice cubes.
  • Pour the prepared tea and serve.

Notes

  • If you are using ice cubes for your drink, add them right before serving to prevent the tea from becoming too diluted.

Variation

  • Black tea in tea bags can be substituted with loose leaf tea. Use 1 teaspoon of loose leaves for every tea bag.
  • Black tea can be substituted with green tea or jasmine tea. Use exact same quantity.
