Coconut Loaf Cake (super MOIST!) 

A super moist and fluffy coconut loaf cake with lemon glaze topping.

Cake: - Butter - Granulated sugar - All purpose flour +    salt + baking powder - Shredded coconut - Coconut milk - Eggs - Vanilla Glaze: - Powdered sugar - Water - Lemon juice

What you need:

Start by creaming the butter. Add sugar and continue to cream until light and fluffy.

Add half of the coconut milk and continue beating until the mixture turns creamy and fluffy.

Next, add the eggs, one at a time. Beat them well after each addition.

Sift the flour, baking powder and salt and add into the creamed mixture. Alternate with the remaining coconut milk.

Next, add the vanilla extract, followed by the coconut. Mix well.

Pour the coconut cake batter into a prepared loaf tin.

Bake for about 35 to 40 minutes.  Remove from the oven and cool completely.

To make the glaze, sift the powdered sugar into a bowl. Add the lemon juice and water and mix well. Pour into a piping bag and drizzle onto the top of the cake.
