Butterfly Pea Latte

This butterfly pea latte is made from blue butterfly pea flowers and is not only great as a hot drink, it is perfect as an iced drink too!

Ingredients

  • 500 ml milk
  • 20 butterfly pea flowers (fresh or dried)
  • 2 teaspoon sugar (optional)

Instructions

Steeping the flowers

  • Pour milk into a small saucepan. Turn on the heat to medium and wait until the milk boils.
  • The milk will froth up as it boils and can overflow, so keep a close eye as you are boiling it. As soon as the milk starts frothing up and reaches to almost the top of your pan, turn off the heat.
  • Add the butterfly pea flowers and stir briefly with a spoon.
  • Cover the pan with a lid and let the flowers steep in the milk for 5 minutes. The milk will turn blue.

Frothing the latte

  • Once the 5 minutes is up, strain the milk.
  • Use the back of a spoon to press the flowers to squeeze out all the extract. Discard the pulp.
  • Next is frothing the latte. This step is optional. If you do not wish to froth your latte, you can simply pour it into serving cups. To froth the latte, you can use a milk frothing tool if you have one. I use a mesh frothing jug to froth my butterfly pea latte.
  • Pour the frothed latte into serving cups.
  • If you like your latte to be sweet, add some sugar to your liking. Serve.

Notes

  • Butterfly pea flowers can be substituted with butterfly pea flower powder  (also sometimes known as blue matcha). Use one to two teaspoons of powder. Add it to the milk when heating up the milk.
  • Whole milk can be replaced with skim milk or plant-based milk like almond milk or oat milk.
  • White sugar can be replaced with any other sweetener of choice such as brown sugar, honey or maple syrup and caramel, but do note that use of colored sweeteners may alter the color of your drink. Butterfly pea extract is also sensitive to acidic pH and will turn into purple when it comes into contact with acidic pH.
 

Variation

  • To make vanilla flavored blue pea latte, add half a teaspoon of vanilla extract to the latte before serving.
  • To make iced butterfly pea latte, pour the latte into a tall glass filled with ice cubes. Serve immediately. If you wish to add any sweeteners to your iced latte, do it before pouring into the serving glasses.
