Ingredients

  • 6 Kiwi fruits
  • 75 g White sugar
  • ½ teaspoon lemon juice (strained)

Instructions

  • Peel the kiwi fruits. Chop them into small pieces.
  • Add the chopped fruits into a medium sized pot.
  • Add sugar and lemon juice to the kiwi fruits.
  • Turn on the heat to a medium flame and cook the fruits until soft, for approximately 15 minutes. Stir constantly to avoid the fruit from burning.
  • Turn off the heat and let the fruits cool down slightly. Transfer into a food processor and process until smooth.
  • Pour the kiwi coulis into a clean and dry container and let it cool completely to room temperature before refrigerating.
  • Keep the kiwi coulis refrigerated until ready to be used.

Notes

  • There are 2 varieties of Kiwis commonly available, i.e. the green variant and the yellow variant (the golden kiwi fruit). Both of these can be used to make the kiwi coulis and depending on whether you use green kiwi or the gold kiwi, the color of the resulting coulis will also be in accordance of the fruit color.
  • For best results, choose fresh kiwis that are ripe. To know if a kiwi is ripe, it should not be hard to press. If it is, it is best to let the fruit ripen on the counter (at room temperature) for a few days.
