Royal Icing Recipe 2 (with meringue powder)

Royal icing is a wonderful icing to work with, especially in warm weather. It sets so well, making this my most preferred choice for piping flowers for cake decorating.

Ingredients

  • 500 g icing sugar sifted
  • 2 ½ tablespoon meringue powder
  • 5 tablespoon warm water
  • A few drops of rose essence optional
  • A few drops of vanilla essence optional

Instructions

  • Sift the icing sugar. Add meringue powder and mix well.
  • Add water into the icing sugar and meringue powder mix. Beat the mixture until it becomes fluffy and stiff peaks form.
  • Use the icing immediately, otherwise, cover it with a damp cloth to prevent crusting. Color the icing as you wish.
