- 150 ml lemon juice
- 150 g sugar
- 60 g blueberries
- 150 ml water (at room temperature)
- 1350 ml soda water (chilled)
- Ice cubes
Making the blueberry syrup
Measure 150ml water (at room temperature) into a medium saucepan.
Add sugar and cook it over low heat until it is completely dissolved.
Add the blueberries and continue cooking until the blueberries turn soft.
Remove the syrup from heat. Strain it into a measuring jug. Press the blueberries with a spoon to mash them and squeeze out all the juice.
Let the syrup cool down completely and then strain the lemon juice in. Mix well.
Pour the syrup into a glass jar or bottle and refrigerate until ready to use.
Making the blueberry soda drink
To make the blueberry soda, pour the above blueberry syrup into a 2 liters pitcher.
Add the chilled soda water and mix well.
Add ice cubes if you wish and serve immediately.
- This recipe makes 2 liters of blueberry soda made entirely with chilled soda water and without ice cubes.
- If you wish to add ice cubes, reduce the soda water in the recipe accordingly. This will avoid the blueberry soda from becoming too diluted as the ice cubes melt.
- To make the blueberry soda in a single serving, mix 1 part of the blueberry syrup with 3 parts of soda water.
- Soda water is best served immediately as keeping it for long after opening will result in its fizzy effect to disappear.
