Making these lime popsicles is super duper easy! How can it not be, when all you need is fresh limes, sugar and water, right?
Plus, there are no complicated methods involved. You squeeze fresh lime juice, add it to homemade sugar syrup, pour them into popsicle molds, freeze them overnight, and you have perfectly refreshing homemade lime popsicles to enjoy!

📋Ingredients
- Fresh Lime Juice - use fresh fruits and strain the juice to remove any seeds and pulp.
- Sugar - white sugar is the best as it keeps the color of the popsicles white.

Substitute and Variations
- I used fresh lime juice in my popsicles. If you cannot find fresh fruits, you can use bottled lime juice. Since the concentration of bottled lime juice can vary, it is best that you follow the direction on the bottle in mixing your lime solution.
- Limes can be replaced with key limes or even calamansi limes.

👩🍳How to Make
Step 1: Prepare the molds. The one I used is a 4 cavity mold to make 4 popsicles.
Step 2: Make the sugar syrup. Measure water into a small pot.
Add sugar to it (image 1). Heat up the solution over low heat. The intention of the heat is to dissolve the sugar.
Keep stirring the solution until the sugar is all dissolved (image 2). Turn off the heat and leave the solution aside to cool down.
Step 3: Juice the limes. Cut the limes into halves. Squeeze out the juice and strain it into a measuring cup.
Note: Roll the limes on your kitchen counter or table with your palms before cutting and juicing. Apply pressure as you roll. This will help loosen the pulp inside and make juicing easier.
Step 4: Mix the juice to the syrup and pour into molds. Add the measured lime juice into the sugar syrup. Mix well.
Taste some to see if it is to your liking. Adjust by adding more water if it is too concentrated or add more juice or sugar as you wish. Pour the lime solution into the prepared molds equally (image 3).
Cover the mold and insert the sticks (image 4). Freeze the popsicles for at least 5 to 8 hours.
Step 5: Unmold and serve. To release the popsicles from the mold, dip the mold in a dish filled with water for a minute or two to loosen the popsicles in the mold.
Pull the popsicles upward from the mold to release them. Serve immediately.
💡Expert Tips
- Generally, frozen treats become less intense after freezing, so it is always better to prepare them in a more concentrated form. The amount of lime juice and sugar I use to make these treats is slightly higher than that used to make a simple lime juice drink. If you prefer a more subtle lime flavor or prefer your popsicles to be much less sweet, you can always adjust these accordingly.
- Limes have rather thick skin, similar to lemons and oranges. While you can squeeze them by hand, it is always easier to use a juicer. An important trick in squeezing lime juice is to roll the fruits on the counter with your hands, and in doing that, applying pressure on them. This helps soften the fruits and helps in juicing them. To juice the fruits, cut them into halves. Place them in a juicer and press to remove the juice.

These cold treats are best eaten when they are fully frozen. That should take any time between 5 to 8 hours, depending on the size of your molds and the temperature of your freezer. I always leave mine overnight.
These homemade lime popsicles can last for a good one month. Always keep them frozen in their molds or unmold and wrapped in zip lock bags in the freezer until ready to serve.
Once fully frozen, you will notice that the popsicles are not easy to be released off their molds.
Depending on the type of mold you use, the most effective way to unmold them would be to dip the molds into a bowl of water for a few seconds. That helps to loosen the popsicles and all you need to do is simply pull them upwards from their molds to remove them.
When dipping the molds in water, take note to ensure the water does not touch the popsicles inside.
Once you have all your popsicles out of the mold, you can place them in plastic bags and return them to the freezer. The next time to want to eat them, you would not have to go through the unmolding process again.

Lime Popsicles
For best results, use the metrics measurements. US customary measurements have not been tested and are only meant for guide.
Ingredients
- 250 ml water (drinking water)
- 100 g sugar
- 3 tablespoon lime juice (approximately 3 limes)
Instructions
- Prepare popsicle mold.
- Measure water into a small pot.
- Add sugar and turn on the heat to low.
- Stir until the sugar is dissolved, keep the heat low.
- Once the sugar is all dissolved, turn off the heat and let the sugar solution cool down completely.
- Cut the limes into half and squeeze the juice out (see Notes 1 & 2).
- Strain the juice and add it into the sugar syrup solution. Mix well.
- Pour the solution into the prepared molds. Cover and insert the popsicle sticks.
- Freeze for approximately 5 to 8 hours until the popsicles are completely frozen.
- To unmold, dip the mold into a dish filled with water. Let it rest in the water for a few seconds before removing the popsicles and serving them.
