What is Durian?
Durian is a seasonal tropical fruit that is common in countries like Malaysia, Indonesia, Thailand and Singapore. It is also sometimes referred to as the King of Fruits.
It is a rather large fruit, almost the size of watermelon and has thick, thorny skin. The durian flesh on the inside is soft and sweet, almost like custard and ranges in color from light beige to yellow. The durian fruit is segmented, and each segment consists of a few pieces of durian. At the core of each durian piece is a brown seed. The seeds are often discarded.
Durian is a rather controversial fruit because of its smell. Some people truly love the fruit for its soft and sweet taste, while some others totally despise it. This is most often due to its strong pungent smell that some find extremely off putting.
There are many varieties of durians and the price of durian vary quite substantially between each variety. Hard core durian lovers often times are willing to pay the high price for the high-end varieties.
📋Ingredients
For the Mousse:
- Durian flesh (durian meat) - choose good quality durian for best results. Make sure the flesh is soft.
- Heavy whipping cream - use full fat cream (with at least 35% fat). Keep the cream chilled until it is ready to be whipped.
- Granulated sugar (caster sugar) - sweetens the mousse. Fine sugar is preferred as it dissolves more readily.
For the Decoration (optional):
- Edible Rose Petals - both fresh or dried petals will work.
- Edible Gold Flakes

Step 1: Prepare the durian flesh. The first step is to prepare the durian flesh.
Separate the flesh and discard the seeds (image 1). For best results, the durian flesh should be chill.
Weigh the flesh and place it into a medium sized plate. Set aside (image 2).
Step 2: Whip the cream.
Pour the whipping cream into a clean, grease-free mixing bowl. Make sure it is absolutely chilled. Add sugar to it (image 3).
Whip the cream until it reaches soft peak consistency. To check if the cream is ready, once you see it thickened, turn your machine off and lift the beaters up. If you see the cream at the bottom of the beaters in soft peaks, the cream is ready (image 4). Do not overbeat. Set the cream aside.
Note: Overbeating the cream with cause it to separate.
Next, beat the durian flesh to break it up. You can use the same whisk attachment you used to whip your cream. The flesh can be quite fibrous and that is fine. Suffice if you beat for about 30 seconds to break it into a creamy consistency (image 5).
Add the durian puree into the whipped cream. Beat the durian mousse mixture briefly until both the cream and the durian flesh are thoroughly mixed (image 6).
Step 3: Pipe the mousse into serving cups. For easy handling, transfer the durian mixture into a piping bag. Snip the bottom to make a hole.
Pipe the durian mousse into prepared dessert bowl or cups (image 7).
Tap the bowls lightly to settle the mousse to a leveled surface. You can tap them onto your palms if you worry about breaking the bowls or you can even tap them on your kitchen counter by lining a kitchen towel on it first (image 8).
Decorate the top with a rose petal and some gold flakes. Refrigerate until ready to serve.

- For best whipping results, make sure the heavy cream is completely chilled. The bowl and the beaters should also be chilled. Warm or room temperature fresh cream will not whip well.

Yes, you can. Defrost the flesh and make sure it is all soft before making the mousse.
Technically, you can. The lesser durian you use, the lesser of durian taste you will get in your mousse. I would not recommend reducing it too much or your mousse will end up tasting like sweet cream instead of durian mousse.
The purpose of sugar in this dessert is to sweeten it. Otherwise, if you choose to omit the sugar, your mousse will still turn out well, only the taste will be less sweet. The durian is a sweet fruit, but the sweetness can vary depending on the variant you use in making this mousse.
